Graduate Assistant

Jessica Moon is a doctoral student and member of the Cellular Exercise Physiology Laboratory and the Exercise Physiology Intervention & Collaboration Laboratory at the University of Central Florida’s School of Kinesiology and Rehabilitation Sciences. She earned her B.S. in Exercise Science and her M.S. in Health Sciences with an emphasis in Sport Science and Performance from Lindenwood University in Missouri. Jessica is also a Certified Sports Nutritionist (CISSN) through the International Society of Sports Nutrition and a Certified Phlebotomy Technician (CPT) through the National Healthcareer Association. At UCF, Jessica has taught a variety of courses, including: Motor Development and Learning, Careers and Professional Development in Kinesiology, Sport Nutrition and Exercise Metabolism, and Assessment and Evaluation in Kinesiology. Jessica’s research interests include exercise immunology, recovery, metabolism, sport supplementation and performance, and women’s health.
